I have written to the company to find out if this is a change in the formula or just to the label, but have not yet heard back. Bring water to a boil, whisking the mixture constantly; cook over simmering water for about 3 minutes.  Add chocolate chips and whisk until melted and smooth.  Turn off heat and leave mixture over hot water.&lt;br /&gt;&lt;br /&gt;Beat egg whites in another bowl until soft peaks form.  (If you have a stand mixer, just get it started first and let it run while you're working with the yolks and chocolate.)  Gradually add remaining 1/4 cup sugar and beat until stiff but not dry.  Fold into chocolate mixture, stirring to mix.  Pour out into champagne parfait glasses and chill at least 3 hours.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;Got this recipe from &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_2"&gt;Epicurious&lt;/span&gt;.com, but made some changes. Margarines must NOT have whey or any other dairy product in them.  One  commercial bread brand and variety that &lt;/span&gt;&lt;span style="font-style: italic;"&gt;is Sam-safe&lt;/span&gt;&lt;span style="font-family: monospace;"&gt; &lt;/span&gt;&lt;span style="font-style: italic;"&gt;Orowheat Whole Grain 100% Whole Wheat bread&lt;/span&gt;&lt;span style="font-style: italic;"&gt;; usually we make our own.)&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Scones:&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Use any standard scone recipe (&lt;a href="http://allrecipes.com/Recipe/Scones/Detail.aspx"&gt;e.g.&lt;/a&gt;), replacing the butter with a Sam-safe margarine (e.g. &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_0"&gt;Fleishman's&lt;/span&gt; UNSALTED sticks) and the cream/milk with rice milk.  Can also add a bit more margarine, to compensate for the lower fat content of the rice milk, but this is not required.  Can include pecans, almonds, peanuts, walnuts, dried cherries, dried strawberries, apple pieces (dried or fresh), cinnamon, vanilla, chocolate chips, colored sugar on top. Put a layer of fresh spinach leaves or other salad greens on bread, then ham slices.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Tuna Salad&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Canned tuna (Bumble Bee albacore or 365 brand from Whole Foods) mixed with mayo, with a dash of &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_3"&gt;Tobasco&lt;/span&gt; or lemon juice, a spoonful or two of sweet pickle relish, and some chopped celery.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Egg Salad&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Hard boil eggs; slice and separate whites and yolks.  Mash yolks and mix with mayo, a squirt of mustard,  salt, pickle relish, maybe some chopped celery.  Chop whites and mix with yolks.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Fruit Salad&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Chopped fresh fruit, which can include the following: oranges, strawberries, shredded coconut, cantaloupe, apples, green grapes, cherries.  I sometimes put in almonds or pecans, too.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Angel Food Cake&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Most has no dairy or soy in it (soy oil is O.K.), but check to be sure.  Slice into fingers or chop into chunks, and serve with jam/jelly/preserves to dip them in.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Meringues&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;The bite-sized ones are less messy; plain/vanilla are safer than other flavors.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Tea&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Any decaf tea;  Sam prefers mint or orange spice. The chef was cagey about what was in it, but I think I'm closing in on it.  May carmelize the onions next time, to see if that adds the finishing touch.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;1 butternut squash&lt;br /&gt;3 cups chicken broth&lt;br /&gt;3/4 cup rice millk&lt;br /&gt;1/2 stick margarine&lt;br /&gt;1 onion, chopped fine&lt;br /&gt;1 clove garlic, minced&lt;br /&gt;3 bell peppers, chopped&lt;br /&gt;1 tbsp honey&lt;br /&gt;1/2 cup instant potato flakes&lt;br /&gt;&lt;br /&gt;Stab squash a few times, then microwave on high for 5 minutes. &lt;br /&gt;&lt;br /&gt;When cool, peel and seed, then chop into 2" by 2" chunks.  Throw this and all remaining ingredients into crock pot, and cook on low for about 8 hours. Cover flat side with brown sugar, then sprinkle with rum or rum flavoring. Place under broiler for approx 2 min. The result was edible, but more fudge-ish than chocolate-ish.  Set up nice and firm in the fridge, though, and popped right out of the mold, so that was good.  &lt;/span&gt;&lt;br /&gt;&lt;br /&gt;1 pkg. Ghiradelli semi-sweet chocolate chips&lt;br /&gt;1/2 tsp vanilla&lt;br /&gt;3 tbsp Fleishman's unsalted margarine&lt;br /&gt;1/4 cup granulated sugar&lt;br /&gt;3 tbsp powdered sugar&lt;br /&gt;1/8 cup rice milk&lt;br /&gt;&lt;br /&gt;spray oil and cocoa powder&lt;br /&gt;&lt;br /&gt;Spray molds with oil, then dust with cocoa powder.&lt;br /&gt;&lt;br /&gt;Melt chips in microwave.  Add remaining ingredients and stir until well mixed.  Fill molds, pressing to make sure there are no air bubbles.&lt;br /&gt;&lt;br /&gt;Place in refridgerator for about 1 hour.&lt;br /&gt;&lt;br /&gt;Pop chocolates out and wrap in foil or plastic wrap.  Store in fridge.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;As I said, this produces a quite rich, fudge-like chocolate.  It was also a little gritty, because of the granulated sugar.  Next time, I will use all powdered sugar, more rice milk, and less margarine, though I may have to add pectin to make it set up.  Might need more vanilla, too. This last time, when I made it so I could remember what I did so I could post the recipe here, it was only so-so. May figure out what I changed and come back and tweak this at a later date.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;2 egg yolks&lt;br /&gt;1/3 cup sugar&lt;br /&gt;4 cups rice milk&lt;br /&gt;2 tbsp Fleishman's Unsalted margarine&lt;br /&gt;1 tbsp cornstarch&lt;br /&gt;1 tbsp pectin  &lt;span style="font-style: italic;"&gt;(&lt;/span&gt;&lt;span style="font-style: italic;"&gt;The Hubster says this is easier to find at OSH than anywhere else.)&lt;/span&gt;&lt;font&gt;&lt;br /&gt;&lt;font&gt;1/4 tsp salt&lt;font&gt;&lt;br /&gt;2 egg whites&lt;br /&gt;3 tbsp sugar&lt;br /&gt;1 tsp vanilla&lt;br /&gt;1/2 tsp rum flavoring&lt;br /&gt;sprinkle of nutmeg&lt;br /&gt;&lt;br /&gt;Separate eggs.  Put whites in fridge, while you work on the custard.&lt;br /&gt;&lt;br /&gt;In medium saucepan, mix egg yolks with 1/3 cup sugar. Mix cornstarch with about 1/2 cup rice millk; pour this and the rest of the rice millk into the pan, add pectin, margarine and salt, then heat over medium flame. &lt;font&gt;&lt;span style="font-style: italic;"&gt;(The good news is that, unlike regular milk, it doesn't seem that the rice milk mixture curdles. The bad news is that it is hard to tell when it's done because it doesn't "coat the back of a spoon" which is the doneness test listed in the original recipe.)&lt;/span&gt; Heat for about 20 min, or until it starts to foam up, stirring often.  Cool.&lt;br /&gt;&lt;br /&gt;When custard is cool, beat egg whites until foamy, then add the 3 tbsp sugar gradually. Beat on high speed until soft peaks form. Fold into cooled custard; stir in vanilla and rum favoring. She can have the apple pies and most of the buns there, and any hamburger that has no cheese, tomatoes (ketchup is O.K.) or sesame seeds.  (Update 4/02/07: McDonald's fries are no longer allowable.)&lt;br /&gt;&lt;br /&gt;At other restaurants, a safe bet is a baked or grilled chicken breast, but ask what they are cooking it in. Also, grilled steak is usually safe. She loves shrimp, so shrimp cocktail is good, too. (Also closer to the amount she will actually eat!) If they do grilled shrimp, make sure it is basted with oil, not butter; and I usually don't take a chance on breading, so we don't order her fried shrimp. Tacos, with no cheese, tomatoes or salsa, are good; she can have avocado on it, but guacamole only if it has no tomatoes or sour cream. Fajitas are usually good, too (as long as they cook the meat in its own fat or in oil, and not butter) as she can have onions and bell peppers.&lt;br /&gt;&lt;br /&gt;For side dishes, pasta with no sauce, plain baked potatoes, and steamed rice are good bets. (We usually bring Sam-safe margarine with us, which widens the possibilities.) Breads are usually NOT safe (though the buns at Micky-D's are).&lt;br /&gt;&lt;br /&gt;Steamed veggies such as carrots, green beans or broccoli are usually safe.&lt;br /&gt;&lt;br /&gt;Angel food cake is usually safe, though you have to make sure they don't put whipped cream (even the fake stuff) on it. Cherries or strawberries on it are O.K. Samantha loves shrimp, though, so that's what we usually use.&lt;br /&gt;&lt;/span&gt;&lt;ul&gt;&lt;li&gt;about 30 small or a dozen large frozen shrimp, shelled, deveined, tail-off, and thawed -OR-1-1.5 cups cooked chicken, cubed -OR- 1-1.5 cups cooked beef, cut into strips&lt;br /&gt;&lt;/li&gt;&lt;li&gt;10+ oz firm pasta (e.g., spirals, shells, ziti), cooked and drained&lt;/li&gt;&lt;li&gt;.5 to .75 cup matchstick carrots&lt;/li&gt;&lt;li&gt;1-1.5 cups frozen broccoli&lt;/li&gt;&lt;li&gt;8-10 oz. sliced mushrooms&lt;/li&gt;&lt;li&gt;3-4 green onions, sliced&lt;/li&gt;&lt;li&gt;2-3 tbsp sesame oil&lt;/li&gt;&lt;li&gt;2-4 cloves of garlic, minced&lt;/li&gt;&lt;/ul&gt;Heat oil over medium heat; saute garlic, green onions, mushrooms and carrots for about 3 minutes. Oranges are allowed, but not orange juice, unless diluted 2:1 with water; apple juice must be diluted 1:1 with water.&lt;br /&gt;&lt;br /&gt;For veggies, the favorites are corn, green beans, green baby peas, and broccoli, and all these are allowable. Avocado and asparagas are allowed; sometimes she likes avocado, sometimes she doesn't. She has not yet had asparagas. Sweet potato and regular potatoes are allowed; remember to use rice milk and Fleishmans, if you make them mashed. Butternut squash and zuccini are allowed.&lt;br /&gt;&lt;br /&gt;There are three Gerber baby foods she eats on a regular basis: bananas, country garden mixed veggies, and butternut squash.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Substitutions:&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;In general, substituting rice milk for milk, and Fleishman's unsalted margarine for butter will make many recipes accessible. (For example, most cakes, cookies and breads can be made this way.) This does not work, however, in cases where the fat content is important; you must then compensate for the much lower fat content of rice milk vs cow's milk (see Custard Pie and Pumpkin Pie recipes).&lt;br /&gt;&lt;br /&gt;In bread machine recipes, I will often replace margarine or butter with vegetable oil.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Brands:&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;I have found the following brands to be safe, though it is always best to double-check the ingredients, and be on the lookout for "New!" on the label:&lt;br /&gt;&lt;br /&gt;Teddy Grahams: Honey and Cinnamon are fine, not sure about the Chocolate, have not been able to examine the Chocolate Chip (doubtful)&lt;br /&gt;&lt;br /&gt;Fleishman's unsalted margarine (their regular margarine is NOT safe; look for whey in the ingredients)&lt;br /&gt;&lt;br /&gt;Smart Balance Lite (a violation of the general rule that "lite" things are usually bad; the regular Smart Balance is not allowable)&lt;br /&gt;&lt;br /&gt;Nucoa margarine&lt;br /&gt;&lt;br /&gt;Bumble Bee Albacore in water&lt;br /&gt;&lt;br /&gt;Hebrew National hot dogs&lt;br /&gt;&lt;br /&gt;Campbell's Double Noodle Soup&lt;br /&gt;&lt;br /&gt;Best Food's Mayo and Miracle Whip (not light versions of either)&lt;br /&gt;&lt;br /&gt;La Choy soy sauce&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Medications:&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Many medications have dairy as a filler, and even this small amount can be harmfull. The Robitussin brand cough syrups are generally allowable, as are (TBD) vitamins.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Random facts:&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;You will not see any reaction if Samantha eats something which is not allowable; it acts more like lead poisoning, building up in her brain, eyes, and liver.&lt;br /&gt;&lt;br /&gt;This is a genetically-based, therefore life-long, condition; she will not grow out of it.&lt;br /&gt;&lt;br /&gt;The reason she cannot take medication for this is that the enzyme is missing from her blood, not from her stomach, as with lactose intolerance. The galactose is properly processed in the stomach, but once in the bloodstream, it cannot be metabolized, and thus builds up in the tissues. Some research is going on to find a mechanism to deliver the necessary enzyme to the blood, as there is a suite of diseases which arise from various blood enzyme deficiencies, but, as far as I know, there is nothing yet even in the early testing stage.&lt;br /&gt;&lt;br /&gt;Galactose levels: If you are consulting the link for the galactose level of specific foods, look for foods with levels 10 mg/100g or below. Interestingly, in Europe, the recommended cut-off level is 25 mg/100g, and many of the parents on the Parents of Galactosemic Children list say that they allow tomatoes, which are 25. Add rice milk, honey, salt, margarine, 2 eggs and 1 egg yolk (save remaining white to brush braids before baking). Stir in 2 cups flour and beat at medium speed of electric mixer for 2 minutes. Gradually add additional flour, enough to make a medium stiff dough, mixing well by hand after each addition so that dough is very well blended. Turn out onto lightly floured board and knead until smooth and elastic, about 8 to 10 minutes. Divide dough in half. Shape dough into two braided loaves and place on greased baking sheet. Cover with towel and plastic wrap. Store in refrigerator for 4 to 24 hours. When ready to bake, remove from refrigerator and uncover. Brush braids with slightly beaten egg white. Let stand at room temperature for 10 minutes. Bake at 375 degrees for 25 to 30 minutes or until done. Add onions and cook until translucent; add mushrooms and carrots and sauté for another minute or two. Add ham to pan and heat until warmed through.&lt;br /&gt;&lt;br /&gt;Remove pizza dough from bread machine and shape on cookie sheet or baking tile (the first time I did this, it was Valentine’s Day, and I made it heart-shaped!).
